Hobart Whisky are a family-owned distillery based in Hobart, Tasmania, and their philosophy is entirely based around making whisky for them, that they love, and want to share.

Hobart Whisky started developing their distillery in 2014 and started producing in 2015. Despite being one of the first dozen Tasmanian distilleries, they flew under the radar for quite a while, and in this time concentrated on making whisky.

Not all expressions are the same, and it’s important to Hobart Whisky that everyone can drink them as they do. Hobart Whisky hand bottle and label each release in their distillery with each bottle having its own identifying bottle number.

Hobart Whisky bears testimony to their Tasmanian malted barley, fermented with style, gently distilled with grace, then sweetly rested in hand selected oak casks.

Each small batch holds its own distinctive characteristics and signature.

Launceston Distillery sits proudly in the heart of Tasmania, based at Launceston Airport’s Hangar 17 – the state’s oldest commercial aviation building.

Their home is the gateway to Northern Tasmania, a region rich in natural beauty and renowned for its premium food, wine and, now, whisky.

Head distiller Chris Condon has a background in the pharmaceutical industry as a quality analyst, Chris crafts his whisky with a fine attention to detail. He developed his love of brewing and distilling as a brewing team leader at Boags Brewery, before becoming the founding distiller at Nant Distillery from 2008 to 2011.

Launceston Distillery whisky is distilled using the finest Tasmanian ingredients and patiently matures in their specially-sourced barrels. Best Tasmanian Whisky – Killara is a boutique Tasmanian distillery producing premium quality, hand crafted single malt whisky and other premium spirits.

Killara Distillery is owned and operated by Kristy Booth-Lark and is one of the few distilleries world-wide to be owned and operated by a female.

Killara is a boutique distillery producing premium quality, hand crafted single malt whisky and other premium spirits.

Each barrel of new make whisky spirit is batch produced in the 600 litre copper pot still. With a strong focus on quality, all products are being made and bottled by hand. Killara Distillery strives to source all the ingredients locally as well as utilising the services other local businesses like the still maker and the cooper.

Best Tasmanian Whisky – Spring Bay Distillery’s approach to making single malt whisky ensures every part of the process has the highest quality application that can be achieved.

Established in 2015, Spring Bay Distillery is the realisation of a dream for owners Cam and Suzy Brett. Having shared a love of whisky for over 20 years, building a distillery was a natural culmination of many years of planning and dreaming.

Spring Bay Distillery’s approach to making single malt whisky ensures every part of the process has the highest quality application that can be achieved. The use of premium Tasmanian barley, the quality of the wash, the distilling, the careful selection of casks and importantly using arguably the best water in the world – East Coast Tasmanian rainwater.

Spring Bay on Tasmania’s pristine east coast is situated on latitude minus 42.5 degrees south. Spring Bay’s cool temperate coastal environment produces some of Australia’s finest seafood and cool climate wines.

The influence of Spring Bay’s terroir comes through the water used in the distillery, which is less than 500 metres from the sea. Most afternoons, sea mist drifts up the valley and falls on the roof of the distillery, later collected when the rain falls. This sea salt imparts a unique profile to the water which is both soft and sweet.
